The new head chef at The Rathskeller at Hanse House in Lynn, Trevor Clark, has ambitions of gaining rosettes for the bistro.
Trevor, joined the Lynn venue last month having previously worked at the Royal Norfolk and Suffolk Yacht Club in Lowestoft. While he was there he entered the East Anglian Suffolk Food and Drink awards and was shortlisted as a finalist, winning praise from the judges for the complexity and ambition of his dishes.
He said: “I’ve been a chef professionally for over 13 years, having trained in the Royal Navy, where I spent eight-and-a-half years before moving to Yarmouth with the family. I like to use local produce where possible which is why I like Norfolk so much because of the abundance of quality ingredients on our doorstep.”
Trevor caters for all functions at Hanse House, such as weddings, wakes and conferences.
The bistro, has a fundraising quiz night on the third Wednesday of every month and is raising money for the Norfolk Hospice, Tapping House.
