Thornham: Chef Phil's top award
CHAMPION chef Phil Milner found the ingredients for his latest award winning recipe within a stone's throw of his kitchens at the Orange Tree pub, at Thornham.
He used fillet of wild sea bass caught off the West Norfolk coast together with razor clams, Brancaster cockles and mussels and sea beets from the shoreline to create a dish that bowled over the judges at the 2010 Great British Pub Food 'Oscars'.
His marine medley earned him the title of Seafood Chef of the Year and he will add the trophy to the one he won at the same awards last year when he was crowned as the top classic chef.
A delighted Phil (32), executive chef at the pub, said he had
deliberately chosen locally sourced ingredients for his winning dish.
"It was something I created specially for the awards and, no doubt, it will now appear on our menu at the Orange Tree," he said.
More than 15,000 chefs entered the first round of the competition, submitting pictures and recipes of their chosen dishes. Judges then shortlisted three finalists in each section for the national "cook-off", which took place in Marco Pierre White's kitchen in Surrey.
Phil had 75 minutes in which to prepare, cook and serve up his food for the judges to taste. To add to the challenge and increase the pressure, the chefs were given a mystery box of ingredients and asked to create an additional dish within the same time scale.
"My recipe was really simple and certainly not hard to cook," said Phil, but he admitted it was a nerve-wracking experience.
The expert judges described Phil's sea bass and accompaniments as "an
outstanding dish" and said, "Phil is a very talented and creative chef".
