By Lynn News Reporter

Within five years of its launch, Eric's Fish and Chips at Thornham is set to expand this summer with the opening of two new outlets.

And while preparations for these are being put in place, the business is celebrating news that it has been named as one of the UK's 10 Best Fish and Chip Restaurants in a leading industry magazine.

Eric's, owned by husband and wife Eric and Lydia Snaith, will be opening doors to eat-in and takeaway premises in North Norfolk at Holt and also in Cambridgeshire at St Ives.

Eric, who is also owner and head chef at Titchwell Manor, told the Lynn News: "It's a very exciting time for us. These are developments which we have been planning for very carefully.

"The Holt shop will be at Fish Hill in a listed building. One of the managers from Thornham will be going there to oversee its running.

"And we will look to employ someone at St Ives to take over its management. We are expecting to be able to open both of the new businesses in June."

The Holt restaurant will have up to 35 covers while at St Ives, there will be 70.

Eric's, a finalist in the Customer Care category at this year's Mayor's Business Awards, opened at Drove Orchards in Thornham in 2014.

It has been named as one of the 10 Best Fish and Chip Restaurants in the UK after extensive research by trade publication Fry Magazine.

To make the 10 Best, Eric's had to impress a mystery diner who visited unannounced and marked the restaurant on over 40 aspects of the business from the quality of the food and customer service to cleanliness and value for money.

The pass mark is set at 96 per cent and Eric's scored an impressive 97 per cent with the mystery diner praising the presentation of the restaurant, the welcoming staff and the perfectly cooked food.

Said Eric: "We are delighted with this recognition. It was great for me and my wife as owners to be judged so highly and it's a credit to all the team for all the hard work and preparation they put in to deliver the best service possible."
