Poppy's Pantry set up by Dersingham home baker Sophie Walker during lockdown
Many small business sprung from the crisis of the pandemic and this was certainly the case for Dersingham baker Sophie Walker.
Lockdowns and changes in work situations meant people became more creative during unpredictable times which included Sophie, who is 22, starting her own business from what was previously just a hobby.
Her job as a barmaid was put on hold once Covid-19 restrictions meant she could no longer work at her employment so she took her hobby of baking to the next level and started Poppy's Pantry.
Sophie said: "I was so bored during lockdown and not allowed to work. Baking is my hobby but now it's become my thing."
The business is flourishing and keeping her busy since she started it just under a year ago and provides cakes, treats and a buffet service.
Customers are able to order and their tasty goods are delivered and Sophie also caters for events and her speciality is making cheesecakes.
She said: "I'm normally known for my cheescakes and have 58 flavours, plus my brownies and sponges.
"Cheesecakes are my thing and banoffee is most popular."
"I do buffets, staff parties, weddings, funerals, christenings, family get-togethers or just for a treat.
"A few gentlemen who live on their own sometimes order the savoury box, which has sausage rolls and pork-pies as it saves them cooking and lasts them a couple of nights.
Poppy's Pantry is named after Sophie's little sister Poppy who she hopes will inherit her business as she builds it up.
Sophie has a five star rated kitchen, a food and hygiene certificate level five and is fully insured.
She said: "Since doing it I have never looked back."
