King's Lynn will get its first vegan kitchen as Resist! Vegan Kitchen plans to open its doors next month
Resist! Vegan Kitchen will be the first vegan eatery to open in Lynn, marking a milestone achievement for the town's diet diversity.
Founder Gareth Ellison has been a vegan for 25 years and in 2017 opened the first Resist! kitchen in Peterborough. The new restaurant broke records becoming the number one dining experience on Tripadvisor in the area within six weeks of opening.
Mr Ellison is a culinary vegan artist, experimenting with flavours and textures to ensure all products are his own creations from scratch.
The Lynn branch of the restaurant will officially open on June 11 on St James Street.
Mr Ellison said: "St James Street is full of independent shops and we've made so many friends with other business along the street already, we have lovely neighbours Boldero & Filby, Rose Garden Flowers and Prontaprint.
"It has a rare community vibe and that's exactly what we wanted. It's a beautiful historic street and is the perfect place for us alongside a hive of other independent local businesses.
"We want to promote that as much as possible. And to create something special for the town."
Resist! offer a dining experience that welcomes all, from meat eaters and so called vegan virgins to those who have been plant based since birth.
Mr Ellison said: "We have a network spanning across the UK and beyond through our reputation and passion for food as well as my connections through the independent music scene. We have vocal and loyal followers throughout the UK".
Mr Ellison grew up in touring bands in the UK punk scene supporting acts like The Misfits, Bad Manners, Capdown, Lightyear and Lynn's very own Vanilla Pod.
The vegan culinary expert also founded Ashes Records, an independent record label with releases featuring Justin Sane (Anti-Flag, US), Frank Turner (UK), Migre Le Tigre (Australia), Mute (Canada) and many many more.
This means Resist! will be bringing bands to Lynn, as well as various arts and culture events for the area.
Mr Ellison said: "It's our ethics which create the core to the business, founded on integrity, community, pro-feminist, LGBTQI+ positive and a safe space for all and we are always striving for an accessible menu with great taste."
Resist! have been winners and finalists in many awards including the UK V Street Food Awards, Small Business Awards and finished in the top ten of The British Kebab Awards 2021, with the ceremony taking place in Westminster, hosted by Mayor of London Sadiq Khan, Jeremy Corbyn and Prime Minister Boris Johnson.
